BBQ Chicken Pizza

Pizza used to be one of those foods that I was really intimidated to make. I would see other people make it and be in awe and then call Little Ceasars (don’t judge) and order one. A couple months ago I decided I was going to give it a try and much to my surprise it was edible and tasted pretty good!

Since then I try to make it every couple of weeks and make adjustments each time trying to get it just the way I like it. This week I did BBQ Chicken Pizza and it turned out so yummy so I wanted to share with all of you. Also I apologize for my terrible photos, it’s one of those weeks where my kitchen is a crazy mess, so we are just going with it. Happy Holidays, right? 

Let’s start with the dough. You will need:

1 pack of Active Dry Yeast

1 Tbsp of Sugar

1 Tbsp Oil 

1 Tsp of Salt

1 Tsp of baking powder – optional

2 Cups of Warm Water – 110 Degrees at least

3 3/4 Cups of Flour 

Spices to flavor – For this pizza I used Oregano, Onion Powder, and Garlic Powder

To start mix your yeast, warm water, and sugar together. Once it’s mixed let it sit for 5-10 min or until it becomes bubbly.

Once your mixture is nice and bubbly add in your oil, salt, spices, and 1 1/2 cups of flour and stir together. I also like to add a tsp of baking powder to get the dough to really rise when it cooks. When that is mixed add your two remaining cups of flour and mix until the dough starts to form and no longer sticks to the edge of your mixer. I ended up adding another 3/4 cup of flour to get it to the consistency I wanted it. Once you have a nice ball of dough place in it a well greased bowl, cover it, and place it somewhere it will rise. You want it to rise to double it’s size which will be about an 1 1/2 to 2 hours. I like to put mine in the microwave especially if I’m going to be cooking on the stove because all  the heat rises helping the dough rise.

While your dough is rising we can work on the toppings for the pizza. For this pizza you will need:

2 small-medium chicken breasts

Half of a yellow onion

1 Pepper, it doesn’t matter what color. I had yellow in the fridge so that’s what I went with 

3 or 4 slices of bacon 

1 cube of Butter

2 Tbsps of Brown sugar

1 Tbsp Apple cider vinegar, you can also use balsamic vinegar

Start by boiling your chicken breasts for 20-30 minutes or until they are cooked all the way through. While your chicken is cooking grab another pan and melt your butter on medium low. Then slice your onion into nice thin strips and place it in the pan with the melted butter. Make sure and stir your onions every couple of minutes and once they start to turn brown keep a really good eye on them so they don’t burn. When 90% of your onions are a nice light brown stir in your apple cider vinegar and brown sugar and let it sit for a few minutes. You want your onions to be soft and have that great caramel taste, but not burn so keep a good eye on them. Place them in a bowl with all the juices and set aside.

Once your chicken is done cooking let it cool and then shred it! Then slice up your bacon and pepper and place them in the pan the onions were cooking in. I would leave some of the juices from the onions in the pan so the chicken can soak up that yummy flavor. Let that cook for about 10-15 min or until your bacon is done.

Now go grab your dough! Cut your dough ball in half and wrap one half up to stick in your freezer for later. Take the other half and roll it out on a lightly floured surface. Once it is rolled out to the size you want take some oil and grease your pizza. Then roll the edges over and pinch them down to make your crust. Grease the crust with oil and then take a fork and poke holes all around the crust. Then place your dough on your pan or pizza stone {we keep our pizza stone in our basement pantry, so I like to warm it up in the oven for a few minutes before}. Once your dough is on your stone you can add your sauce and toppings. This pizza is really simple as far as sauce goes because all you use is BBQ Sauce. Spread the sauce all of the pizza and then throw on your toppings. I also drizzled some BBQ sauce on top of my toppings. Set your oven to 475 Degrees and stick your pizza in for 10-12 min or until the crust starts to turn golden. Pull it out and add your cheese and then stick it back in the oven on broil until your cheese is nice and bubbly. Pull it out, slice it up, and enjoy!

My husband and son devoured this pizza, which always makes you feel good! I think it will definitely be making more appearances around our house. I love it because it is really yummy with a thick airy crust and only takes a couple hours to put together.
