It’s June and according to the weather report summer is officially here! We had a really wet spring, but it is supposed to hit 90 this week and the forecast is nothing but sun.
This sunny weather means we spend a lot more time playing outside. When you play outside starting at 9 am and play as hard as my little dude sometimes you need a snack to “get some energies” as C likes to say. And what could be yummier on a hot day than some quick homemade Popsicles?
I love Popsicles, probably because it usually means summer is close or here. These strawberry lemonade Popsicles are super easy and so delicious!
What you need:
1 cup of strawberries, frozen or fresh
1 to 2 cans of lemonade. You could do any kind of lemonade, but we had leftover Minute Maid Lemonade from a party.
Funnel. This is optional, but I like it because it contains the mess!
Pour some of your lemonade into your blender with your strawberries. Blend until the strawberries are puréed to your liking. I like mine a little chunky. Pour the rest of your lemonade into your blender and blend for 1 minute.
Once you have your strawberry lemonade mixture pour it into your Popsicle container and stick in the freezer. It usually take a couple hrs before they are nicely frozen, 3 or 4 to be really sure. I would make these in the morning and then they will be ready for your afternoon snack in the sun.
